Why cups do not always convert to the same number of grams

A cup measures volume; a gram measures mass. One cup of honey weighs far more than one cup of flour, and even flour changes with scooping and packing. Use the ingredient mode for a practical estimate, but follow a recipe author’s stated weight whenever available. For baking, a kitchen scale is usually more repeatable than cups.

U.S. cup, metric cup, and fluid ounce

This tool uses the U.S. legal cup of 240 milliliters, commonly used on nutrition labels and convenient recipe conversions. Traditional U.S. customary calculations may use about 236.6 mL, while a metric cup is 250 mL. A U.S. fluid ounce is a volume unit and is not the same thing as an ounce of weight. Check the recipe’s country when precision matters.
